Juicy Gazpacho
Ingredients
¾ cup of Organic Beet Just Juice
¼ cup of Organic Carrot Just Juice
2 large tomatoes
1 cucumber
1 green onion
1 ripe avocado
1 clove garlic
2 tbsp apple cider vinegar
Salt and pepper to taste
1 tsp balsamic vinegar (optional)
1 small carrot (for garnish)
Directions
Peel the cucumber and roughly chop together with the tomatoes, then blend all ingredients in a food processor. Add vinegar and salt and pepper to taste. Transfer to bowls.
